I can take absolutely no credit for this salsa. My friend Lindsay’s mom gave her the recipe and she made it for one party and every single person that ate it was in love. I never got the official recipe from her, but I’ve helped her make it, and have made it on my own a few times. She doesn’t add cilantro or jalapeno, but I like the addition. Here’s how I do it:
Crack Salsa
1 Can Black Beans
1 Can Black-Eyed Peas
1 Can Shoepeg Corn (tiny, white kernels)
1 Red Bell Pepper, diced
1 Green Bell Pepper, diced
2 Tomatoes, diced
1 Red Onion, diced
1 Jalapeno, seeded and diced
2 Avocados, diced
Handful of Cilantro, chopped
Bottled Italian Dressing, or homemade vinaigrette
Few dashes of Salt
Squirt of lime juice
Ready for the complicated directions?? Mix it all up in a bowl. Add enough dressing to coat the mixture, it shouldn’t be pooling on the bottom of the bowl. Try not to eat it all before your guests get there.
