Chocolate Chocolate Chip Muffins
Adapted from Nigella Lawson’s recipe on Food Network’s website. Nigella is a goddess. I want to live in her house and talk like her and eat all of her creations.
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 4 tablespoons cocoa powder
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1/2 cup chocolate chips
- 1 cup milk
- 1/3 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
Preheat the oven to 400°. Either line a muffin tin with paper liners or use a nonstick silicone tin like I use. The recipe yields 12 regular sized muffins so plan your tins accordingly. I bet these would be great as jumbo muffins, too.
Mix the dry ingredients (flour, baking powder, baking soda, cocoa powder, sugar and salt) in a mixing bowl. Mix the wet ingredients (milk, oil, egg, vanilla) in a smaller mixing bowl. Add the wet mixture to the dry, and add the chocolate chips. Stir just until mixed, being careful not to over mix.
Pour the batter into your tin and bake for 20 minutes. Let them cool slightly in the tin, then carefully transfer to a cooling rack.
