Grilled Stuffed Jalapenos

I made these for a Super Bowl party a few weeks ago.  I was at my local Mexican grocery store and spied a giant bag of jalapenos for, get this, $1.

How could I not buy them?

I didn’t have to think too hard about what I was going to make with them.  Jalapenos just beg to be stuffed with cheese, am I right?

Start with about 20 jalapenos.  Slice them in half, lengthwise.

Wash your hands with lots of soap and don’t even think about touching your face for a few hours.

Mix together the softened cream cheese, shredded sharp cheddar cheese, garlic powder and cilantro, if using.  Season with salt and pepper.

Fill the jalapeno with a spoonful of the cream cheese mixture.  Don’t go overboard, you don’t want them to spill over and make a mess.

See? The cream cheese mixture should be level with the sides of the pepper.

Arrange your peppers on a heavy-duty foil lined baking tray/dish that is lightly sprayed with oil and grill until the bottoms are charred a bit and the cheese is melted.

Devour.  Make every weekend for the next month or so.

Grilled Stuffed Jalapenos
You can also bake these in the oven at 375  for about 25 minutes, or until the cheese browns.

  • 20 jalapenos, halved lengthwise
  • 1 pkg cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup chopped cilantro
  • 1/2 tsp garlic powder
  • salt and pepper, to taste

Slice the jalapenos in half lengthwise.  Set aside.  Mix together the remaining ingredients, seasoning to taste with salt and pepper.

Fill the jalapenos with a spoonful of the cream cheese mixture.

Place in a baking dish lined with heavy duty foil and sprayed lightly with oil.

Carefully transfer the foil to a medium-hot grill.  Cover.  Keep peeking under the lid to catch them when the cheese is melted.  The cooking time varies depending on how hot your grill is, but it should take somewhere around 8-10 minutes.  The cheese should be melted and the bottoms should be slightly charred.

Transfer the jalapenos back into the baking dish.  Let cool slightly before eating.

    And I love that you reminded us not to touch our faces – I made that mistake once, and my nose burned for almost an entire day :(

    Hello, these sound wonderful so I am going to make them for a Pitch Tournament we are in on Saturday. I do have one question. Your recipe says to cook them on a grill, does that mean literally. Can you cook them in the oven? If so, what temp? Thanks

    PS. I have made several of your recipes and every one of them have turned out great. Even Aaron like the Black Bean Burgers.
